Gingerbeer | Recipe Research

Ginger is one of my favorite flavors (except in gingerbread for some reason,) so for the past few months I've been trying to make ginger beer. I have pretty limited experience making home brew beers, but I've done lots of home fermenting of other kinds. I've also worked my way though a home brew beer kit before with my dad, so I had some loose understanding of the process. Because of this, I was bit over confident about knowing what I was doing. Rather than starting with a tested recipe, I was winging it based on the Wikipedia article. It should be no surprise that my first 3 attempts were pretty unsuccessful. Despite these failures, I'm still trying a 4th batch and this time I'm referencing an actual recipe: How to Brew Alcoholic Ginger Beer - Self Reliant School.

I say I "referenced" the recipe because there are several deviations I made, which I'll get into if the brew works. To double check both the recipe itself and the deviations I was taking, I had read through several other recipes from home brewing/beer brewing websites, which were very helpful. Although these two sites seemed a bit more reliable, the first recipe seemed a bit more conducive to single gallon brewing.
